Description
It is derived from Bacillus sp. and produces chitosan oligosaccharides from chitosan.

Production of chitosan oligosaccharide (COS)

 

 

Characteristics
· Type of chitosanase: Endo type
· Molecular weight: 45kDa
· Optimal temperature: 60°C
  (Caution: Oligosaccharide should be produced at 40°C due to enzyme stability)
· Temperature stability: Maintaining the activity more than 90% after incubating at 40°C for 24 hours
· Optimal pH: pH 4.0~6.0 (pH stability: pH 3.0~10.0)
· Effect of metal ion: No inhibition by metal ions except Ag2+, Hg2+
· Effect of deacetylation: High enzyme activity to 40~99% deacetylated chitosan
· Main products: Chitosan oligosaccharide (3-7 sugars)​
