Description
It is derived from Trichoderma viride and produces NAG(N-acetyl glucosamine) from chitin.

Characteristics
· Type of chitinase: Exo type
· Optimal temperature: 60°C (conversion; more than 90%)
· Optimal pH: pH 7.0
· Optimal temperature for NAG production: 40~45°C(conversion; more than 90%)
· Optimal pH for NAG production: pH 3.5~4.0
· It can be used for the production of safe food ingredient by enzymatic process, which can replace conventional acid-hydrolysis process.​
